Aafter getting pregnant a weird thing happened that I didn’t expect. I started losing weight instead of gaining it like I should have been. Now it used to irk me when girls said things like “I can’t gain weight, it’s the worst!” Like, really? That sounds like a blessing, not a problem. Then I started losing weight and it really was the worst. I offer my sincere apologies now to those girls that I secretly mocked in private. I want my baby to be healthy and on top it all I felt really weak. Long story short, my blood work came back and my thyroid hormone was low. I was put on a strict gain weight diet and these were my lifesavers. I don’t know where the recipe originally came from, but I got it from my wonderful mother. They are so much better than box brownies because. 1)They are homemade 2)They are amazingly delicious and have the perfect consistency, meaning you can eat at least 5 in one sitting 3) They are HEALTHY (kind of). Don’t look at the name and get freaked out. It’s love at first bite.

A black bean brownie addict.

Black Bean Brownies

Ingredients:

  • 3/4 cup black beans
  • 1/2 cup butter
  • 1/2 cup chocolate chips
  • 1 tsp vanilla
  • 2 eggs
  • 2/3 cup sugar
  • 1/2 tsp baking powder
  • 1/3 cup flour

Directions:

Blend beans, melted butter, melted chocolate chips, vanilla, and eggs together.

Pour liquid into bowl, add dry ingredients. Bake at 350 in 9×9 for 20 minutes. Sprinkle powered sugar on top.

*Note* I blend the beans and the rest of the liquid ingredient in my Oster blender checking it a few times to make sure I got all the black beans liquified. If you don’t do this then you will get a crunchy bite every now and then.
